How to Whip Up This Easy Black Bean and Corn Salad and Sweet and Spicy Dressing

  1. Make the dressing. Add all of the dressing ingredients to a large bowl and stir until completely combined. 
  2. Prepare the salad. Place all of the vegetables, avocado, beans, chickpeas, and cilantro into the bowl with the dressing and toss them together before gently folding in the cheese. 
  3. Serve. Modify the seasoning to taste if needed and garnish with cilantro before serving or storing. 

Note: If not serving immediately, wait to add the avocado to the salad to avoid browning.

Can I Store Leftover Black Bean and Corn Salad? 

One of the things we love about this salad is that it’s so easy to store, making it perfect for meal prep. Toss it together and throw it in the fridge and you have an easy lunch or side dish ready to go!

To refrigerate, just transfer to an airtight container and store it in the fridge for 3-4 days. Remember to avoid adding avocado until you’re ready to serve it. 

This salad is best eaten fresh so we don’t recommend freezing it. The textures of the veggies aren’t going to be the same once the salad is thawed.

Instructions

Prepare the Dressing:

  • In a large mixing bowl, whisk together the fresh lime juice, extra virgin olive oil, cumin, smoked paprika, oregano, honey, salt and pepper until well combined.

  • Add the black beans, chickpeas, red bell pepper, cooked corn, jalapeño, red onion, avocado, and chopped cilantro to the bowl with the dressing. Toss to coat all the ingredients evenly.

Freeze the lemonade for up to 3 months in a resealable freezer bag or freezer-safe container.

  1. Bake the cookies. Prepare the dough by shaping it into a dozen round cookies and bake them until golden brown on the edges, per the instructions on the package. 
  2. Make the topping. Add the cream cheese and powdered sugar to a medium bowl and beat before adding the cream, ricotta, zest, and extract and beating again until smooth and fluffy.
  3. Assemble. Once the cookies have cooled, spoon the sweetened cheese mixture over the top of each cookie and top with the berries. Garnish the cookies with honey and serve or store immediately. 

Note: You can easily make the elements of fruit pizza cookies ahead of time and store them until you’re ready to assemble them. Bake the cookies and store them at room temperature in an airtight container. Or prepare the frosting ahead of time and refrigerate it for up to 3 days.

We don’t recommend freezing fruit pizza cookies since their texture will change once they are thawed.

    1/2 cup cold heavy cream, 1/2 cup whole milk ricotta cheese, 2 teaspoons lemon zest, 1 teaspoon vanilla extract

Assemble the Dessert Pizza Cookies:

  • Spread about 2 tablespoons of the cheesecake ricotta topping on each cooled cookie.
  • Top with a mix of strawberries, blueberries, and raspberries.

Can I Store Leftovers? 

You sure can store this easy pizza! But it can get soggy, so make sure to reheat it in an air-fryer or oven to eliminate some of the moisture that may seep into the crust. 

Sheet pan pizza can be stored in the refrigerator for up to 3-4 days. To keep it fresh, place the leftovers in an airtight container or wrap them tightly in plastic wrap or aluminum foil.

For longer storage, you can freeze the pizza for up to 2 months. Make sure to wrap each piece individually in plastic wrap and then place them in a freezer-safe bag or container to prevent freezer burn.

Instructions

  • Preheat your oven to 375°F (190°C).

Zucchini dip is our go-to for a fresh, creamy, and utterly delicious snack that’s perfect for any occasion. All we do is quickly cook up some zucchinis and blend them with rich olive oil, nutty tahini, tangy Greek yogurt, and garlic for a dip that’s light, flavorful, and satisfyingly creamy.

We like to serve our dip up with homemade crispy pita chips or fresh veggie sticks but you can also spread it on some crusty bread — and it’s perfect for taking sandwiches and wraps to the next level. Whether it’s for a casual family snack, a party appetizer, or a picnic treat, this zucchini dip is always a hit!

  • Place the crisper plate into the COSORI air fryer basket.
  • Select the preheat function, and adjust the temperature to 385 degrees Fahrenheit. Then, tap start/pause.

We start with crisp romaine lettuce for the base and add other veggies like juicy cherry tomatoes and crunchy cucumber slices. We toss in butter beans and chickpeas, too, for a creamy texture,. Then we top it all off with savory tuna, tangy pepperoncini, briny Kalamata olives, and zesty red onion. 

And in our opinion, no salad is complete without dressing! Our vinaigrette is a light combination of olive oil, lemon juice, and a hint of honey, all whisked together with Dijon mustard and aromatic herbs.   • Combine beans. Drain and rinse the butter beans and chickpeas and add them to a large bowl. 
  • Add remaining ingredients. Place the tuna, vegetables, and herbs in the bowl with the beans. 
  • Make dressing. Add all of the ingredients for the vinaigrette to a separate bowl and whisk until fully combined.

  • 1 whole seedless navel orange washed, quartered, and seeds removed
  • 4 eggs at room temperature
  • 3/4 cup olive oil
  • 1 1/4 cup granulated sugar

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9×5 loaf pan or line it with parchment paper for easy removal.
  • In a blender, combine the whole seedless navel orange (quartered and seeds removed), eggs, olive oil, granulated sugar, sour cream, and vanilla. Process the mixture until smooth. Be careful not to over-blend.

  1. Prepare the phyllo. Place a sheet of phyllo on a clean work surface. Scrunch the phyllo together across the wide side. It will resemble a pleated surface. 
  2. Bake. Carefully lift the scrunched-up phyllo dough, and place it along the short side of the baking pan. Transfer the pan to the oven, and bake. 
  3. Bake again. Drizzle the phyllo with melted butter. Then, return it to the oven. 
  4. Prepare the topping. Whisk the milk, egg, sugar, feta, mozzarella, salt, and pepper in a bowl. 
  5. Top the phyllo. Pour the milk mixture over the baked phyllo, and sprinkle the sesame seeds on top. 
  6. Bake. Transfer the dish back to the oven, and continue to bake until the phyllo browns.
