Why I Love This Recipe

What pre-packaged treat do you most remember your parents buying you as a child? Graham crackers? Chocolate chip cookies? Gingersnaps? Oreos? In my day, it was Fig Newtons. I think my mother assumed the fig center made them a more sensible choice than the other options at the grocery. While my mom usually baked her own delicious cookies, I don’t think she ever considered trying her hand at homemade Fig Newtons. Even when I started thinking about making a healthier, less sugar-filled, homemade version of Newtons I was a bit intimidated at the prospect of doing it. It just didn’t seem like a recipe that would be easy to pull off in a home kitchen.

Well, I was wrong. Totally wrong. In fact, in the same amount of time it would take me to make a simple batch of chocolate chip cookies, I made these decadently rich bars, boasting sweet figs tucked inside a tender, flaky whole wheat cookie. My kids agreed they were superior to the store bought Fig Newtons they had recently tried at a friend’s house, and they couldn’t keep their mitts out of the tin I put them in.

One night after two of my little cookie monsters absconded with three cookies a piece and were coming back for more, I hid the tin. I did such a good job hiding it out of sight in fact, that five days later I realized I totally forgot about them. Figuring they would be stale, I opened the container and pulled one out to try. Amazingly, these homemade fig bars were still as moist and irresistible as the first day I had baked them. Store bought fig bars for us? Never again!

The Ingredients

  • Dried figs, stems removed: Figs provide natural sweetness and a chewy texture that makes these bars irresistible.
  • Honey: Adds a touch of extra sweetness to the fig filling.
  • Unsalted butter: Helps create that tender, flaky texture in the cookiedough. Use softened butter for the best results.
  • Sugar: Just enough to sweeten the dough without overpowering the natural fig flavor.
  • Large egg: Adds richness and helps bind the dough together.
  • Vanilla extract: Infuses the dough with a warm, aromatic flavor.
  • White whole wheat flour – A healthier alternative to regular flour, offering a boost of fiber and nutrients.

Substitutions and Variations

  • Figs: If you’re not a fan of figs, try using dried dates, apricots, or prunes for a different flavor.
  • Honey:Maple syrup or agave nectar can be used in place of honey.
  • Sugar: Swap out the sugar for coconut sugar or a sugar substitute like monk fruit sweetener for a lower-glycemic version.
  • Flour: If you prefer, you can use all-purpose flour or a gluten-free flour blend instead of white whole wheat flour.

How to Make Homemade Fig Bars

Step 1: Preheat your oven to 350°F. Place the dried figs in a small bowl, cover with hot water, and soak for 10 minutes.

Step 2: Remove the figs from the water with a slotted spoon and place in the bowl of a food processor. Add the honey and 1 tablespoon of the soaking liquid. Puree until smooth and spreadable.

Step 3: In the bowl of a standing mixer, or with a hand mixer, cream together the butter and sugar for 2 minutes, or until smooth. Add the egg and vanilla and mix until incorporated.

Step 4: Add the flour and mix until a dough forms.

Step 5: Roll dough between two pieces of parchment paper and shape into a 12 x 5 inch rectangle.

Step 6: Spread the fig mixture on one side of the rectangle, spreading it evenly along the 12-inch side leaving a 1/4-1/2 inch border along the edges.

Step 5: Fold the dough over on top of itself and gently press the dough together at the edges.

Step 6: Cut each log into 10 cookies and transfer to a silpat or parchment-lined baking sheet. Bake 15-20 minutes, or until golden.

Tips for Perfect Homemade Fig Bars

  • Use quality dried figs: The flavor of your bars will depend largely on the quality of your figs, so choose ones that are plump and moist.
  • Don’t skip the soaking step: Soaking the figs ensures they’re soft enough to blend into a smooth filling.
  • Seal the edges well: To prevent the filling from leaking out during baking, make sure to press the edges of the dough together firmly.

DINNER:

Sunday: Super simple Lemon Herb Chicken for Sunday supper on top of a bed of Lemon Spaghetti with Toasted Walnuts. We’re also make a side of Air Fryer Veggies too!

Monday: For meatless Monday we’re making Shiitake Veggie Stir Fry with some Sweet Gingery Tofu for some added protein. 

Tuesday:  Crispy Fish Fingers with a side of Air Fryer Okra and Crispy Smashed Potatoes!

Wednesday: Sweet Potato Black Bean Enchiladas with a side of Spanish Rice and fresh Guacamole.

Thursday: Salmon Burgers with Sweet Potato Fries and Sugar Snap Pea and Asparagus Saute.

Friday: Pizza Friday! This Sheet Pan Pizza with No-Yeast Crust is super easy to whip up! We’re having that with a decadent Chocolate Chip Cookie Cake for a fun weekend dessert.

Tuesday: Crock Pot Meaty Pasta Sauce on pasta with a Caesar Salad. I love this recipe because I can set it and forget it in the crock pot and dinner cooks itself!

Wednesday: Fish in Parchment Paper loaded up with tons of veggies and a side of Brown Rice Cakes.

Thursday: Mu Shu Chicken on top of white rice. This meal is so easy to whip up! Pro tip: Use a rotisserie chicken to save you time!

Friday: Green Machine Pizza and a Skillet Mexican Brownie for the weekend!

Saturday: Order in from local restaurant!

  • Peeled and Deveined Shrimp: I always have shrimp in my freezer. It make this recipe super convenient and fast. You can use fresh or frozen shrimp, just make sure they’re peeled and deveined for easy eating.

Variations and Substitutions

There aren’t many substitutions you can make in a recipe with only two ingredients, but you can absolutely try different types of pesto to switch up the flavor profile. If classic basil pesto isn’t for you, try Hemp Seed Pesto, Kale Pesto, Spinach Pesto or even Pumpkin Seed Pesto. If you don’t love shrimp, this Halibut Pesto Kabobs recipe could be a good fit!

How to Make Pesto Shrimp Skewers

Step 1: Place the shrimp in a bowl with the pesto. Stir to coat the shrimp evenly, then cover and refrigerate for 30 minutes. While the shrimp marinate, preheat the broiler.

Step 2: Thread the marinated shrimp onto your skewers. If you’re using wooden skewers, remember to soak them in water beforehand to avoid burning. Or cover the ends with aluminum foil.

We’ve got these chewy and crunchy Chocolate Chip Granola Bars as well as Strawberry MuffinsPeach Fruit Leather and Roasted Carrot Hummus with veggies to dip. 

LUNCH:

For lunch we’ve got Summer Pasta SaladBanana Split Breakfast (super delicious for lunch too!), Turkey Club Lettuce Wraps, and Broccoli Cheddar Patties

DINNER:

Sunday: Pretzel Fried Chicken has the best crunchy outer layer and is tender and juicy on the inside. We’re pairing it with Air Fryer Veggies (of course, my go-to) and Crispy Smashed Potatoes.

Monday: For a super simple and easy meatless Monday we’ve got this Pasta Mama that will knock your socks off! 

Tuesday: Soy Ginger Marinated Chicken with Asian Style Cauliflower Rice and Crispy Broccoli.

Wednesday: Turkey Teriyaki Meatballs with Un-Fried Rice. Gemma loves helping me make these!

Thursday: White Bean, Shiitake and Vegetable Bowl is absolutely delicious and the whole family loves this recipe.

Friday: For a fun pizza Friday we’re having Taco Salad Pizza! And for dessert we’re making super fun and easy Air Fryer Donuts

Saturday: Order in from local restaurant!

After many years of making school lunch for my kids, I now realize I’ve got breakfast, lunch and dinner covered. What about the kid’s pre-lunch snack, though? I’m the first to admit this is where, in the past, I’ve given it little to no thought. For the longest time, I would toss an apple or banana into their lunch bag, which are totally fine choices, but when my youngest has caught me forgetting to add a snack or laming out with one of these default items I knew I had to change my ways. I came up with a list of my Top 15 Snacks For Kids School Lunch to help inspire all of us (myself included!)

When it comes to snacking, I try to remember to offer a variety of foods through the week to satisfy my kids’ cravings. Easy snacks are the best way to keep everyone happy. You can offer them in your kid’s lunchbox, after-school, pre-dinner or any time of the day that you want something to tide them over to the next meal and fill your kids’ bellies with a wholesome treat!

Tips for Packing Awesome School Snacks

  1. Keep It Balanced: Opt for snacks that provide a mix of nutrients – a combination of proteins, healthy fats, and carbohydrates will keep your kids fueled and focused.
  2. Prep Ahead: Some kids love smooth foods, like a smoothie or applesauce pouches, and others leans towards crunch. Get to know what your kids prefer and keep those on hand so you don’t have to think about it! This saves time and ensures you always have something ready to go.
  3. Go for Variety: Keep snack time exciting by offering a variety of flavors, textures, and colors. Kids love trying new things, so mix it up with different fruits, veggies, and dips.
  4. Portion Control: Pack snacks in kid-sized portions to prevent overindulgence and food waste. We love this snack box for just that!

Easy Snacks for Kids School Lunch

  • Crunchy Veggie Sticks with Classic Hummus: Carrot sticks, cucumber slices, and bell pepper strips paired with a dollop of creamy hummus make for a delightful and healthy snack. I have several different hummus recipes you can try like Red Bell Pepper Hummus, Red Beet and White Bean Hummus and Roasted Carrot Hummus!
  • Apple Slices with Nut Butter: A classic combo that never disappoints! Slice up apples and pair them with peanut butter or almond butter for a sweet and satisfying treat. You could also swap out the nut butter for cream cheese and make these cute Apple Donuts!
  • Popcorn: I think my favorite snack of all time is Paper Bag Popcorn and I’ve passed that obsession on to my kids. It’s crunchy, salty and you can add nutritional yeast to boost the flavor and nutrition!
  • Greek Yogurt Parfait: Layer yogurt with this super healthy granola and fresh fruits in a small container for a fun and nutritious snack that’s also easy to eat.
  • Banana Peanut Butter Roll-Ups: Spread peanut butter on a whole wheat tortilla, add a banana, and roll it up for a tasty twist on a classic sandwich.
  • Fruit Kabobs: Sometimes just piercing fresh berries, bananas or grapes on a skewer makes a classic snack more exciting for kids. You could also add some cheese squares on the fruit kabobs too!
  • DIY Trail Mix: Create a custom trail mix with nuts, dried fruits, and a sprinkle of chocolate chips or dye free chocolate coated candies for a scrumptious and energizing snack.
  • Frozen Yogurt Bites: This would be better for an after-school snack since it’s frozen but freezing yogurt with fresh fruit is a refreshing and nutritious snack option. Try out my Frozen Yogurt Bark or super cute Frozen Yogurt Fruit Bites.
  • Turkey/Ham and Cheese Roll Ups: I love these little wraps because they’ve got protein from the deli meat and the cheese and then you also get a fruit in there with the apple slices. Plus they’re super tasty and fit great in a snack box.
  • Fruit Leather: I figured out the best hack for using up extra fruit that’s on the edge of going bad is to make fruit leather! Strawberry Fruit Leather, Peach Fruit Leather and Persimmon Fruit Leather make perfect school snacks.
  • Animal Face Toast: This treat takes a little extra effort, but is SO cute to serve for a school snack. If you’re a super parent you could even send a different face of Animal Face Toast every day of the week!
  • Squeeze Pouches: It’s super easy to add a squeeze pouch to my kid’s backpack for a school snack. There are several great organic ones that you can get at the grocery, or you could make your own nutritious smoothie or puree and add them to reusable pouches to save money.
  • Roasted Chickpeas: I love making these for a quick snack because chickpeas are high in protein so they’ll actually keep you satisfied until the next meal! You can make classic Air Fryer Crispy Chickpeas or a sweeter version of Roasted Honey Cinnamon Chickpeas.

With these 15 kid-friendly school snacks, snack time will be a breeze, and your little ones will be all smiles! Remember to keep it balanced, try out different flavors and textures, and get creative. Why I Love This Recipe

What is it about crust on sandwich bread that many kids just seem to hate?! It is so common for kids to eat around the crust, ask for the crust to be cut off, or avoid a sandwich altogether if they see even a hint of crust. So, I came up with my version of what is now known as an Uncrustable and it’s one of the best sandwiches for school lunch! Here’s why:

  1. Personalized Perfection: Customize the fillings to match your child’s taste buds – from classic PB&J to even turkey and cheese, the options are endless. Plus, you get to cut them into fun shapes if you want!
  2. Healthier Ingredients: You can also opt for healthier ingredients like whole-grain bread, natural nut butter, and high-quality or homemade fruit preserves.
  3. Time-Saving Wonders: Let’s face it, mornings can be chaos. Having a stash of homemade Uncrustables in the freezer means you can grab, pack, and conquer the school lunch with ease.
  4. Cost-Effective: Compared to buying pre-packaged options, making Uncrustables at home is budget-friendly and you can use the crusts to make other recipes like Croutons or Cinnamon Toast Pinwheels!

What You’ll Need

  • Sandwich Bread: A classic store bought sandwich bread works best for Uncrustables. They key is that it’s pretty soft. These won’t work as well with a more artisanal loaf of bread.
  • Fillings: Whatever sandwich filling floats your boat! You can do the classic PB&J combo, a different nut or seed butter with homemade strawberry preserves or even hummus with chopped veggies.
  • Sealer: You can use a Sandwich Sealer like this one or this one or, if you don’t have one of those tools, a fork and a cookie cutter or mouth of a large glass will work too!

How to Make Homemade Uncrustables

Step 1: Spread a piece of sandwich bread with 1 tablespoon of peanut butter. Place 1 tablespoon preserves on top of peanut butter.

Step 2: Top with another piece of bread.

Step 3: Sandwich the two pieces together and cut with a cookie cutter, Uncrustables sandwich cutter or the mouth of a large glass.

Step 4: If using a cookie cutter or glass, remove the excess bread, take a fork and press down just the edges of the bread to adhere to each other. If using an Uncrustables cutter follow packages directions.

Tips and Tricks

  • Customize Your Fillings: Get creative with fillings like almond butter, banana slices, honey, cream cheese, or even hummus and veggies. Make sure the fillings aren’t too runny to prevent soggy sandwiches and don’t overfill.
  • Seal Like a Pro: I used to use a fork with a cookie cutter to seal (which works great), but my new favorite school lunch gear item is probably this special Uncrustables sandwich sealer that presses down the edges and seals the sandwiches tight. Whichever method, just make sure you seal properly to prevent fillings from leaking out during freezing.
  • Use the Crusts: I hate wasting food! Save those crusts for breadcrumbs, homemade croutons or these cute Cinnamon Toast Pinwheels!

How to Freeze and Thaw Homemade Uncrustables

  1. Freezing: Place the assembled sandwiches in a single layer on a baking sheet and freeze for about an hour. Once they’re firm, transfer to an airtight container or zipper bags to prevent freezer burn. Freeze Uncrustables for up to two months. Make sure they’re properly sealed to avoid freezer burn.
  2. Thawing: To enjoy, simply take a sandwich out of the freezer in the morning and let it thaw in the school lunchbox or at room temperature. It’ll be ready to eat by lunchtime!

  • fruit preserves

Instructions

  • Spread a piece of sandwich bread with 1 tablespoon peanut butter.
  • Place 1 tablespoon preserves on top of the peanut butter and top with another piece of bread.
  • Sandwich the two pieces together and cut with a cookie cutter, Uncrustables sandwich cutter or the mouth of a large glass.

“Sushi” Sandwich Filling Ideas

With the exact same ingredients you normally use to make a sandwich and the aid of a simple rolling pin, you can turn a sandwich your kids already love into visually enticing “sushi”. Here are some filling and spread combinations we love:

How to Make Kid-Friendly “Sushi” Sandwiches

Step 1: Cut the crusts off the slice of bread and roll out as thin as possible with a rolling pin.

Step 2: Spread the piece of bread with your chosen spread and fillings. Don’t overfill!

Step 3: Starting at the side closest to you (the filled end) tightly roll the mixture and press to seal into a roll. I dab a bit of spread across the end of the roll to act as a glue sealing the roll.

Step 4: Cut the roll into even pieces and add to lunch box or snack platter.

Tips and Tricks

  • For the bread: You’ll want to use fresh, soft sandwich bread to make this recipe. Using dried out bread can lead to cracks and breaks making it difficult to roll your sandwich up.
  • Don’t overfill: Be careful not to overfill the sandwiches to ensure easy rolling.
  • Get Creative: Experiment with different spreads and fillings to keep things interesting. Hummus, Nutella, or even guacamole can add a fun twist!
  • Make it Fun: Let your kids help with rolling out the bread and assembling the “sushi.” They’ll love being part of the process.

  • spread of choice (hummus, whipped cream cheese, olive tapenade, mayonnaise, mustard, etc)
  • filling of choice (tuna salad, deli slices, thinly sliced or grated vegetables, cheese, etc.)

Tuna Salad

  • 1 can tuna (I use albacore in water)
  • 1 teaspoon capers, drained and chopped
  • 1 tablespoon mayonnaise (plus more for spreading on the bread)
  • 1/2 teaspoon dijon mustard
  • 1 small cucumber, cut into long, thin sticks
  • 1 small carrot, grated

Instructions

  • Cut the crusts off of each slice of bread and roll out as thin as possible with a rolling pin.
  • Place the long side of the rolled out bread closest to you.
  • Spread a thin layer of spread on each slice of rolled out bread.
  • Add fillings onto half of the bread lengthwise making sure not to over stuff the roll (a little goes a long way)
  • Starting at the side closest to you (the filled end) tightly roll the mixture up and press to seal into a roll (I dab a bit of additional spread across the end of the roll to act as a glue sealing the roll).
  • Cut the roll into even pieces and repeat with remaining pieces of bread and fillings of choice.
  • *If making tuna salad: Place the tuna, capers, mayonnaise and dijon mustard in a bowl and stir to combine.

Notes

For the Bread: You’ll want to use fresh, soft sandwich bread to make this recipe. Using dried out bread can lead to cracks and breaks making it difficult to roll your sandwich up.
Don’t overfill: Be careful not to overfill the sandwiches to ensure easy rolling.
Get Kids Involved: Let your kids help with rolling out the bread and assembling the “sushi.” They’ll love being part of the process.
Layer Mindfully: Use the thicker or stickier filling first and then top with the thinner filling. It’s easier to layer this way!
