Banana French toast is easy, delicious, and a great way to use a ripe banana! Here’s how to whip up this simple plant-based breakfast.

Banana French Toast

Got a ripe banana on hand? Here’s a great way to use it to make a deliciously simple breakfast: try banana French toast! This accidentally vegan breakfast uses mashed banana instead of egg to make a sweet custard mixture for dipping bread. Dip slices of sourdough bread then fry them until golden. Each bite is sweetly banana-scented without being too decadent: a great way to start the day!

Ingredients in banana French toast

Banana French toast is a fun way to use a ripe banana. The recipe requires just one ripe banana, which is nice for when you don’t have enough bananas on hand for banana bread or banana muffins (which require 3 to 5). It’s also a great vegan breakfast idea, since the mashed banana replaces the eggs. Here are the ingredients you’ll need:

  • Mashed ripe banana
  • Milk of choice (dairy or oat milk)
  • Vanilla extract
  • Cinnamon
  • Nutmeg
  • Kosher salt
  • Sourdough bread
  • Neutral oil or vegan butter, for cooking

Best bread for banana French toast

The best bread for French toast (in our opinion) is sourdough bread. Sourdough bread has a naturally firm texture and a slight tang to the flavor. It also happens to be vegan, which is helpful if you’re making this as a plant-based or vegan breakfast.

Other types of bread work with this recipe, including traditional French toast breads like challah and brioche bread. We love the texture of brioche French toast and it works great with banana. We typically avoid store-bought sandwich bread for French toast, since it can have a mushy texture.

The most important part: a ripe banana!

As with any banana baked good, you’ll want a very ripe banana: the blacker the better! Bananas with black spots or a blackened peel bring added moisture, sweetness, and pure fruity flavor to baked goods like bread, muffinspancakes, cookies, cake, and more.

This recipe works with a range of ripe banana to very ripe banana, so the peel can simply have black spots. But the riper the better, so if it’s blackened that works too!

How to make banana French toast

Banana French toast is nearly identical to making our classic French toast, but you’ll use mashed banana to mimic the whisked eggs. There’s also no need for added sugar, since the banana brings natural sweetness to the dish. Here’s what to do:

  • Whisk: In a wide shallow bowl or container, whisk together the mashed banana, milk of choice (dairy or non-dairy), vanilla, cinnamon, nutmeg and kosher salt.
  • Dip: Preheat a griddle over medium heat and brush with neutral oil or melt butter. Soak each side of 4 slices of bread in the milk mixture for 10 to 15 seconds. Try not to oversoak the bread or it will become mushy.
  • Fry: Place the bread on the hot skillet and cook 3 to 4 minutes per side, until browned.

Banana French toast toppings

Banana French toast has so much fragrant banana flavor, you don’t need a ton of toppings to compete with the flavor! We like ours topped very simply. Of course, you can get a little more creative too. Here are a few ideas for vegan French toast toppings:

  • Sliced bananas and maple syrup: This is simple and deliciously effective.
  • Cinnamon sugar: If desired, toss both sides in cinnamon sugar (go to cinnamon French toast).
  • Fresh berries: Strawberries, blueberries, blackberries or raspberries add a nice compliment.
  • Fruit sauces: Blueberry SauceRaspberry Sauce or Strawberry Sauce add a nice touch as well.
  • Nut butter: Topping it with a swirl of nut butter makes the perfect banana French toast.

Mixed Berry Smoothie

This Mixed Berry Smoothie recipe is rich, creamy, packed with lots of fruit and perfect for a quick breakfast or a midday snack.

The post Mixed Berry Smoothie appeared first on Budget Bytes.

When I don’t have time to make a big breakfast, one of my favorite ways to start the day has always been with a quick smoothie. They’re refreshing, satisfying, easy to make, and perfect for a simple breakfast or a sweet midday snack! I’ve been making smoothies for quite some time and one smoothie that I always find myself coming back to is this Mixed Berry Smoothie recipe. It’s rich, creamy, packed with lots of fruit, and way cheaper than Smoothie King!😄 So no matter if you’re new to smoothies or a smoothie pro, you’ll definitely want to add this one to your smoothie rotation!

Ingredients For Mixed Berry Smoothie

This mixed berry smoothie recipe is made with simple ingredients and is also very flexible. Here’s what we used:

  • Frozen Mixed Berries: Frozen fruit is the key to getting a super creamy and thick smoothie consistency, without having to use any ice. For the berries we used a mix of frozen strawberries, raspberries, and blackberries. But feel free to use any combination of frozen berries that you like. Frozen berries are also a lot more economical than fresh berries because they don’t go bad quickly in your fridge!
  • Banana: You can either use a fresh or frozen banana in this smoothie recipe. I opted for a frozen banana to make my smoothie extra thick and keep it from melting too fast.
  • Almond Milk: We used plain, unsweetened almond milk for our smoothie, but you can use any type of dairy or non-dairy milk that you like.
  • Yogurt: A little bit of yogurt gives the smoothie a wonderful creamy texture. We used plain yogurt, but a vanilla flavored yogurt would also taste great.
  • Sugar & Vanilla Extract: A little bit of sugar and vanilla provide sweetness and added flavor. Feel free to substitute with honey in place of the sugar. And if you’re using a vanilla-flavored yogurt or vanilla almond milk, then you can omit the vanilla extract.

What Else Can I Add In My Smoothie?

There are lots of different ingredients you can add to this mixed berry smoothie for extra nutrients and to make it more filling. Here are a few ideas:

  • Quick oats
  • Ground flaxseeds
  • Chia seeds
  • Hemp seeds
  • Spinach
  • Kale
  • Honey (in place of the sugar)

Make a Smoothie Bowl!

I love using this mixed berry smoothie recipe to make delicious smoothie bowls! The smoothie itself becomes the base foundation of the bowl, then just top the smoothie with yummy toppings like fresh fruit, seeds, granola, and maybe a drizzle of honey. Smoothie bowls are super versatile and easy to customize based on what you currently have in your fridge and pantry. They’re also super filling and just a fun way to turn this breakfast smoothie into a refreshing sweet treat! ;)

Money-Saving Tip!

You can often find great deals on fresh berries when they are in season. Berries are mostly in season during the Summer and early Fall months. Use this time to grab your favorite berries when they are on sale and freeze them for later! Sometimes I even go strawberry picking with my little ones in the month of May, then freeze some of the strawberries to use the rest of the year.

Banana bread French toast is a fun way to repurpose leftovers into breakfast or brunch! Topped with syrup, it’s a rich and decadent treat.

Banana Bread French Toast

Here’s a fun way to transform banana bread into a decadent breakfast treat: Banana Bread French Toast! This is the ultimate breakfast or brunch for banana lovers: the moist, dense texture of the quick bread is ideal for frying until golden brown and cinnamon-spiced. Topped with bananas, chopped pecans, and a drizzle of maple syrup, it’s a luxurious way to start the day (that’s honestly more like dessert). Needless to say, our family are big, big fans of this one!

Ingredients for banana bread French toast

Banana bread French toast starts with a good bread, of course! Our favorite is our best banana bread recipe, but you can use any recipe you like. Cut the bread into slices, then dredge it into our classic French toast custard mixture of eggs, milk, cinnamon, and nutmeg. The main difference is that the custard has none of the customary sugar, since this quick bread is very sweet. Here’s what you’ll need for this recipe:

  • Banana bread
  • Eggs
  • Milk
  • Vanilla
  • Cinnamon and nutmeg
  • Salt
  • Butter, for cooking

A note on serving size

Banana bread is very filling: one slice is much denser and more filling than a typical slice of bread. For that reason, plan to eat only one slice of banana bread French toast per person. This recipe is rich and decadent, so you’ll want to account for that in your serving! For

Tips for making banana bread French toast

If you’ve got banana bread, this French toast recipe is a breeze! All you’ve got to do is whisk the custard, dip the bread, and fry it up. Here’s how to make French toast:

  • Slice: Slice the banana bread into 3/4-inch slices. (This is the perfect width; too thin and it falls apart but too thick and it’s too filling.)
  • Whisk: In a wide shallow bowl or container, whisk together eggs, milk, vanilla, cinnamon, nutmeg and kosher salt.
  • Dip: Preheat a griddle over medium heat and melt 1 tablespoon butter. Soak each side of 4 slices of bread in the egg mixture for about 30 seconds.
  • Fry: Place the bread on the hot skillet and cook 2 to 3 minutes per side, until browned.

Topping ideas

Banana bread French toast is very rich in itself, so it doesn’t need a lot of toppings to make it taste incredible! We like it best with the following:

  • Pure maple syrup
  • Sliced bananas
  • Chopped pecans or walnuts, toasted if desired

If you like, you can add other toppings, but keep in mind it’s very sweet. You could try Greek yogurt sweetened with a little maple syrup to cut the sweetness with the acidity in the yogurt, or some sliced strawberries or raspberries. Or, go with a small dollop of whipped cream for an even more decadent treat.
