  • Canned fire roasted tomatoes: Try to find this type of canned tomato if at all possible! Roasting tomatoes over an open flame adds a mellow, sweet flavor. Several brands carry this special type of tomato. If you can’t find them, use the highest quality crushed tomatoes you can find: San Marzano tomatoes are a good substitute. Double check that the can says crushed before purchasing.
  • Small garlic clove: Garlic cloves widely vary in size. This recipe calls for a small clove. If you don’t have one, use half a medium or a quarter of a large clove. This is important so that the sauce doesn’t end up too garlicky.
  • Dried oregano: Make sure to use dried oregano that’s fairly new so that the flavor is strong enough. If it’s been in your cabinet over 1 year, it’s time for a refresh!
  • Olive oil and salt: Use extra virgin olive oil, and no recipe is complete without a pop of kosher salt.

Pro tip

How to make homemade pizza sauce? Many methods simmer the sauce on the stovetop. But after loads of testing, we found that fire roasted tomatoes make it possible to mix right up without cooking. Every time we make it, when I dip my spoon into that beautiful red sauce, it’s beyond my wildest dreams. We used to make it in a blender, but it works simply mixed by hand too! Here are the steps:

Step 1: Peel and finely mince the garlic. Or if you’re using the blender method, peel the garlic clove and slice it into a few rough pieces.

  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic (1/2 medium clove)
  • ½ teaspoon dried oregano
  • Scant ½ teaspoon kosher salt

Instructions

  1. Finely mince the garlic (or if using the blender method, simply chop it into a few rough pieces).
  2. Stir together all ingredients in a bowl until the oil incorporates. Or, place all ingredients in a blender and blend until fully combined (this makes a slightly runnier textured sauce). 
  3. After Taco Bell took away my fav menu item, I knew I had to make my own version. This Vegan Mexican Pizza is similar to how I order it at the actual restaurant and yet it tastes even better! Make a homemade Mexican pizza right in your kitchen.

Tex-Mex is one of my fav food groups and works its flair into a lot of the recipes I share. You’ll often find my family dining on dairy-free options like Tacos de Papa or my Austinite Vegan Tacos.

I keep the chickpea mixture for these Chickpea Tacos in my freezer for whenever the mood strikes (it warms up so well in the toaster oven!). So naturally I had to make a version of my fav fast food order!

Ingredients in a Vegan Mexican Pizza

This recipe is fun to make and so good; you’re family may start requesting it on a regular basis. They don’t need to know it’s vegan or plant-based… it’s just so good! Here’s what I’m putting in mine:

  • Yellow onion: This is the base of flavor in this recipe and easy to sauté for the exact right flavor.
  • Jalapeño: Remove the seeds when chopping for less spice, or keep them in for the full experience. If you can’t handle spicy peppers then swap for green or red bell peppers.
  • Taco seasoning: I make my seasoning and keep it in a jar in my spice cabinet. That way I can grab it whenever the mood strikes. You can also use premade seasoning and measure it out.
  • Refried beans: Double refried pinto beans is how I replace the meat in the real deal, so it’s going into my homemade version, too.
  • Flour tortillas: Taco Bell uses corn tortilla shells in their recipe yet I wanted a slightly bigger surface so swapped them for flour in my version.
  • Taco Bell Hot Sauce: To really achieve the authentic flavor, you gotta go with the authentic sauce. Yet feel free to use red enchilada sauce if that’s more your style.
  • Vegan shredded cheddar cheese: If you’ve never tried vegan cheese before, cheddar is a great place to start! It’s got a distinct flavor and most shredded varieties I’ve tried seem to melt which is what we want.
  • Tomatoes: Diced tomatoes are the only veggie topping on the original version, so I include them on mine… along with some other fabulous additions you’ll love.
  • Green onions: I ask for green onions when I order the Mexican Pizza so you better believe I’m adding them to this homemade recipe as well.
  • Black olives: My love for black olives has me putting them on a wide variety of dishes and they pair perfectly with this pizza as well!

I like to serve mine with either guacamole or vegan avocado crema and some cashew cream. All these options make for great dipping or drizzling over the pizzas.

Vegan Mexican Pizza Meat Substitutes

If you want the texture of meat or the flavor it adds to your pizza without the real thing then I’ve got some options for you to try.

Walnut Taco Meat

Honestly while the walnut might throw some people, my vegan walnut taco meat is a great sub in any recipe that uses ground beef. It magically has the texture and weight of beef without any animal products in it.

Toss it with your fav taco seasoning and you’ve got the perfect substitute.

Tofu Taco Crumbles

If you want a nut-free option then try the tofu taco crumbles from Make it Dairy Free. I’ve made this version, too and its great!

Layer either one of these options in on top of the refried beans when assembling your homemade Mexican pizzas, just like Taco Bell does.

How to Create a Vegan Mexican Pizza

This may sound like a lot of steps yet it’s really just making sure all the components are heated properly before assembling for the final bake. Not hard!

Step 1: You’ll use both the stovetop and the oven for this recipe so go ahead and preheat the oven to 400°F while you also heat a skillet over medium-high heat. Add avocado oil to the skillet, just enough so the diced onions won’t stick.

Step 2: Sauté the onions and jalapeños for 5 minutes or until the onions are translucent and golden brown.

Step 3: Stir in the taco seasoning with a bit of water and the refried beans. Depending on how dried out your beans are, you may need to add a bit more water to get a creamy consistency. Remove this mixture from the heat.

Step 4: Brush avocado oil on both sides of all your tortilla shells then place each shell in the prepared baking trays. They should be split between the 2 trays evenly and arranged in a single layer so they can crisp equally.

Step 5: Bake the tortilla shells for 5 minutes then flip and bake for 3 more minutes, or until all the shells are toasted.

Step 6: Spread the refried bean mixture over the tops of half the toasted shells then cover the beans with the other toasted shells.

Step 7: Layer on the sauce, cheese, tomatoes, green onions and olives. Bake again in oven for 5 minutes or until the cheese is melted. Since vegan cheese varies from brand to brand, your melting time will also vary.

Step 8: Remove the pizzas from the oven and cut each one into 4 slices. Enjoy!

Homemade Mexican Pizza FAQs

Can the Mexican Pizza be vegan?

If you are at Taco Bell and want vegan version of the Mexican Pizza then swap the meat for refried beans and omit the dairy. Yet if you want an even better version that is completely animal-free then give my Vegan Mexican Pizzas a try. They use refried beans and vegan cheddar cheese. You can even use cashew cream as a vegan sour cream dipping sauce.

What are the Taco Bell Mexican pizza shells made of?

The Taco Bell Mexican pizzas are made using corn tortilla shells. You can use these in your homemade version, or swap them with toasted flour tortilla shells, whatever your preference.

Is Taco Bell’s Mexican Pizza vegan?

No, Taco Bell’s Mexican pizza isn’t vegan. If you omit the meat for refried beans then you still have the cheddar cheese on it. Omit the cheese if you’re at the restaurant, or consider making your own version using a vegan cheddar cheese.

Vegan Mexican Pizza (Taco Bell Copycat)

Ingredients

  • 3 tbsp avocado oil
  • ½ yellow onion chopped
  • 1 jalapeño chopped
  • 1 tbsp taco seasoning
  • 1 ½ cups refried beans
  • 8 flour tortillas
  • ¼ cup Taco Bell Hot Sauce
  • 2 cups vegan shredded cheddar cheese
  • 1 cup tomatoes chopped
  • ¼ cup green onions sliced
  • ¼ cup sliced black olives

Instructions

  • Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
  • Heat skillet over medium-high heat with 1 tablespoon avocado oil.
  • Sauté chopped onion and jalapeño for 5 minutes or until onions are lightly golden.
  • Stir in taco seasoning and refried beans. If it's really thick then add a little water and stir until the mixture reaches a creamy consistency. Remove from heat.
  • Brush avocado oil on both sides of each tortilla shell. Split the shells between the 2 prepared baking sheets and bake for 5 minutes (there should be 4 shells on each sheet in a single layer; if you double or triple the recipe, you'll need to bake the shells in batches). Flip and bake for 3 more minutes, or until tortillas are toasted. Remove from oven.
  • Spread the refried bean mixture on the tops of half of the baked tortilla shells. Place the remaining plain tortilla shells on top of the beans. Each one be tortilla shell, refried beans then tortilla shell.
  • Layer the Taco Bell Sauce, shredded cheese, tomatoes, green onions and olives on the tops of the tortilla shells. You should end up with 4 total pizzas.
  • Return the baking sheet full of layered pizzas to the oven for 5 minutes, or until the cheese is melted and golden. Depending on the vegan cheese you use, the melt time may vary. Remove from oven and cut each pizza into 4 wedges to serve.

Notes

  • Swap fresh jalapeños with pickled jalapeños or for a no-spice option, green bell pepper.
  • Swap yellow onion with purple onion for sharper taste.
  • You can use enchilada sauce instead of Taco Bell Sauce, or your fav sauce for tacos.
  • Swap refried pinto beans with cooked black beans.
  • If you still want that “meat” texture then feel free to add some Walnut Taco Meat instead of or alongside with the refried beans.
  • You can use corn tortilla shells instead of flour, yet they will be smaller so you’ll make a few extra “pizzas”.
For Serving
  • If you want a dairy-free sour cream option then use my Cashew Cream to dip/drizzle when serving.
  • Vegan Avocado Crema also works as a delicious dipping sauce.

My favorite sauce of all time.

You know, growing up I did not care for tomato sauce. I’ve rambled about this a million times. My mom made pasta every Thursday night and I never wanted to eat marinara or meat sauce with it. I didn’t mind it on pizza, but I also didn’t like my pizza to be loaded with sauce.

Now, I feel like if I had vodka sauce back in the day, I’d be all over it. I would have requested it every Thursday and never complained. I can eat it weekly now!

There is something about it – it’s so slightly sweet, savory, silky smooth and so rich. The way that it coats noodles is something else too. It coats every bit of the noodle in the best way possible: the perfect amount. Not too much, not too little. 

I make my own vodka sauce from a base of tomato paste and it’s very easy. I find it to be one of the simplest sauces to make, but also one with the most flavor! The recipe calls for starchy pasta water, but a quick combo of water with starch and cornstarch works too. You can also just use warm water or stock. But I love making the faux pasta water.

I have a recipe for a traditional vodka sauce pizza with my homemade dough. And it’s fantastic. But it does require making dough and sometimes I want the pizza when I haven’t made the dough! You know. Craving problems. 

So this is the puff pastry version. Embarrassingly easy. Add on the cheese. Tons of basil. Bake it until super flakey and golden and bubbly. DREAMS.

This is one of our favorite fun meals to make at home. 

I know, I know. French bread pizza is nothing new. In fact, I shared my first one here on the blog almost 14 years ago.

But making roasted garlic butter and garlic bread, and THEN throwing on some pizza toppings?

Sign me up.

If you’re looking for a delish meal to make at home on a busy weeknight – or even on a Friday night after an exhausting week, or for a house full of kids and their friends, this is it!

Totally it. 

The garlic bread gives the pizza a huge flavor pop and makes it taste extra special. So much better than what you get in the frozen foods aisle.

And trust me, I would know. I lived for frozen french bread pizza as a tween!

Let’s do this. 

Starting with the garlic bread. There are many ways you can make this. 

First, you can roast the garlic and squeeze the cloves into butter and mash. This will take about an hour, but it’s worth it and is also something you can do ahead of time. This is the option I’m including below in the recipe!

Next, you can make garlic confit from Everyday Dinners. And if you have garlic confit on hand, you can mash it into the butter! 

Finally, you can always just use some raw garlic, mince it and mash it into the butter. Raw garlic isn’t nearly as good as the caramely, roasted cloves, but it works in a pinch!

I spread the garlic butter on the french bread, then bake it for a little under ten minutes, just to get it going. The butter melts into the bread, the outsides get crisp.

Then come the toppings! Our go-tos are always fresh mozzarella, marinara, pepperoni and sliced sweet peppers. We all love this combo! But of course, the best part of these pizzas is that you can add whatever the heck you want. (more…)

Here’s a pie that’s one of the Italian greats: Quattro Formaggi! This classic Italian combination of four cheese is popular for a reason: combine each flavor and texture and it makes one completely irresistible slice! There’s the melty mozzarella, sharp and salty Parmesan and Pecorino cheese, and the subtle funk of gorgonzola. Combine it all on pillowy pizza crust with zingy pizza sauce and it’s a match made in pizza heaven.

What is quattro formaggi?

Quattro formaggi means four cheese in Italian, and refers to a popular style of pizza featuring a combination of four cheeses, with or without red sauce. The types of cheeses vary based on the pizzeria, but the most common combination is mozzarella, gorgonzola, Parmesan and fontina cheese. Other variations include swapping out the Parmesan and fontina with pecorino romano, asiago, ricotta, taleggio, robiola, or other Italian cheeses.

For this spin on quattro formaggi pizza, we used Pecorino Romano in place of the fontina cheese to bring a salty intensity to this pie. Here are the ingredients you’ll need for this pie:

How to make a Quattro Formaggi pizza that tastes like you’re in Italy? Make homemade pizza dough! We’ve honed our dough recipes to perfection over a decade of recipe testing. Each one of the recipes below works perfectly in a standard oven or pizza oven to make next-level artisan pizza:

The best sauce for quattro formaggi (or go without)

Quattro formaggi pizza can be served with a red tomato-based pizza sauce or without sauce, called Pizza Bianca (white pizza). They both taste great, but we like bit of red sauce to really make this pie shine. Here are a few notes:

  • For a red pizza, spread a bit of tomato sauce for a bold, saucy pie. Try this best homemade pizza sauce recipe, which you can whip up in just 5 minutes, no cooking required.
  • For a white pizza, make sure to brush the dough with olive oil before layering it with cheese. It’s a little more cheese forward and dryer. To add a little more moisture, you could consider spreading a ricotta as a base like in this Pizza Bianca.

If you’re making our best pizza dough or thin crust pizza, you’ll need a pizza stone and peel for this recipe. If you’re using a pizza oven, it typically comes with its own pizza peel that can withstand the high temperatures. If you don’t have these tools, consider making the sheet pan pizza dough or a pan pizza! Here are some notes on these tools:

  • Pizza stone: Baking on a pizza stones makes the crust crisp on the outside and chewy on the inside. Here’s the pizza stone we recommend.
  • Pizza peel: This paddle slides the pie onto the hot stone in the oven. We recommend this standard pizza peel or this conveyor pizza peel, which makes transferring to the oven a breeze.
  • Pizza oven (optional): An outdoor pizza oven makes next level pizza! We have experience with both the Ooni pizza oven and the ROCCBOX (the ROCCBOX is our preference). We used a pizza oven to get the charred crust you see in the photos.

This Quattro Formaggi pizza is irresistible! It’s topped with a tangy red sauce and the classic Italian combination of four cheeses.


Ingredients

  • 1 recipe Best Pizza Dough 
  • ½ cup Homemade Pizza Sauce
  • ½ cup shredded mozzarella cheese (whole milk if possible)
  • 1 ½ tablespoons grated Pecorino Romano cheese
  • 2 tablespoons grated Parmesan cheese
  • 3 tablespoons gorgonzola crumbles

Instructions

  1. Make the pizza dough: Follow the Best Pizza DoughThin Crust Pizza Dough or Pizza Oven Dough recipes to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).
  3. Make the pizza sauce: Make the Homemade Pizza Sauce. (You’ll use about ½ cup for the pizza; reserve the remaining sauce and refrigerate for up to 1 week.)
  4. Bake the pizza: When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  5. Spread a thin layer of the pizza sauce over the dough. Add the mozzarella cheese, then sprinkle with the Pecorino Romano, Parmesan and gorgonzola cheese. 
  6. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 to 2 minutes in a pizza oven).
  7. Allow the pizza to cool for a minute or two before slicing into pieces. Serve immediately.

I apologize to the half of you who absolutely hate pickles!! 

To the other half, you are my people. And that is why we are making a cheaters pickle pizza today!!!!

Cue so many exclamation points.

Really though, if you hate pickles? I get it. They can be polarizing. Eddie doesn’t like pickles at all, so this pizza is his nightmare. Actually, sometimes I just text him pictures of this pizza to mess with him. It’s funny.

I, on the other hand, LOVE pickles. I live for pickles. It’s been that way since I was a kid and I don’t see it changing anytime soon. The tart, briney pickles call my name daily. And now, I even love sweet pickles. Give me dill or give me bread and butter, even spicy – I will take any kind of pickles.

Now this is my absolute favorite version of a pickle pizza. 

I like to make my own faux ranch spread – I use plain greek yogurt or sour cream and I mix it with some ranch seasoning. I really like the ranch seasoning from Trader Joes! This spread goes right on the puff pastry. Basically, it’s the “sauce.” 

Next, the cheese! I like to use sharp white cheddar with the pickles. There aren’t many better combos out there. Sometimes I’ll have a few pieces of sharp cheddar with pickles (and olives!) as a snack. It’s divine. 

Then, the pickles. For this recipe, I usually like dill pickle chips. I find that they are bite size and the perfect shape to have a few pickles per slice of pizza.

So, I am no stranger to puff pastry pizza. I have multiple recipes for them in Everyday Dinners – they are one of my weeknight meal lifelines. Lots here on the blog too. And I love how quickly and easily they come together. The crust is so flakey and delicate, so it’s imperative that you don’t overload any section of the puff pastry. You want the pickles and cheese evenly distributed. And then you bake it! 

P.S. my favorite puff pastry brand is one that does not have perforations in it. I love the wewalka brand and jus roll too. 

This pizza takes 20 to 25 minutes and if you love pickles… oh my gosh. You will LOVE it. I finish it off with some fresh chives and of course, a big drizzle of hot honey. The spicy sweetness pairs super well with the dilly pickles. It’s like a huge flavor explosion that you can’t pass up.

I love this for a quick and easy weeknight meal, or even a party snack or appetizer. It’s sharp and tart and sweet and hot and just filled with such an incredible pop of flavor – with minimal ingredients.

This grilled bread is a favorite of ours. Garlic butter grilled breadsticks are such a hit – like a toasty pizza dough doused in garlicky herb butter and lots of parmesan cheese. Always a winner!

This is where I grill pizza dough, smother it with melted butter, tons of garlic and fresh herbs, then slice it into strips and call it breadsticks.

I debated on calling them… pizza sticks? Grilled dough sticks? Grilled pizza bites? I had no idea what to call them for you. But we call them grilled breadsticks. Even if they are just grilled pizza dough. Sliced into strips. Doused in garlicky butter.

I just can’t get enough of the butter part. I mean you can straight up SEE the butter here, right?

So here’s how I do it!

I like to use my pizza dough recipe. Usually half of the recipe. But you can use any pizza dough that you like! One from Trader Joe’s, one from your favorite pizza joint – anything. 

While the dough rises, I make the most delicious garlic butter. Butter, garlic, salt, fresh herbs like parsley and basil. Any herbs work! I melt this all together in a saucepan and let it sit and marry together.

The grill is preheated to the highest setting. I roll out the dough like I’m going to make a pizza – but that’s it! The dough itself goes right on the grill, just plain. I grill it until it’s puffy and cooked and charred in a few places.

The minute it comes off the grill, I brush the garlic butter over every.single.inch. Don’t miss a spot! Then give it a big sprinkle of parmesan cheese.

I let this sit for a few minutes and slightly cool. Then I slice it into strips.
