If you’re not into processed cheese, this easy queso dip recipe is for you. It uses real cheese (no Velveeta here, folks) and milk to make a creamy, flavorful cheese dip you’ll make again and again. I use a medium cheddar but you could certainly substitute mild cheddar if that’s what you have on hand.

- Unsalted butter
- Garlic
- White onion
- Jalapeño
- All-purpose flour
- Milk
- Shredded medium cheddar cheese (a high-quality, good-melting cheese is best)
- Diced tomato (I prefer Roma tomatoes)
- Fresh cilantro
- Fresh lime juice
- Kosher salt

How to Make Easy Stovetop Queso
- Melt the butter in a medium saucepan or skillet over medium heat.
- Add the garlic, onion, and jalapeño, and cook until the onion is translucent, about 5 minutes.
- Whisk in the flour, and then slowly whisk in the milk.
- Reduce the heat to low.
- Add the cheese and stir until melted.
- Stir in the tomato, cilantro, lime juice, and salt.
- Serve immediately, or keep warm while serving so it stays melted. Stir in additional milk, 1 tablespoon at a time, if the queso starts to thicken.

How to Serve and Store Easy Stovetop Queso
Serve immediately with tortilla chips. Keep warm on the stovetop over low heat, stirring frequently. Or, transfer to a fondue pot or slow cooker to keep warm. Stir frequently to prevent clumping.
Store leftover queso in an airtight container in the fridge for up to five days. Reheat in a sauce pan over medium low heat stirring continuously. Or reheat in the microwave at 50% power in 30-second increments.

- 1 jalapeño, seeded and minced (keep seeds for spiciness if desired)
- 1 tablespoon all-purpose flour

- 1/2 cup seeded and diced tomato
- 2 tablespoons chopped fresh cilantro
