How to Make This Mediterranean Ground Beef Meatball Recipe

  • Make the Mixture. Add all of the ingredients except the flour to a large bowl and mix with your hands to combine. 
  • Form. Add the flour and combine before making uniformly sized meatballs. Place them on a prepared baking sheet lined with parchment paper
  • Bake. Place the baking sheet in the preheated oven and bake until the meatballs are browned and have reached 160 degrees Fahrenheit on a meat thermometer.
  • Serve. Take the meatballs out of the oven and allow them to rest briefly before serving.

Can I Store Leftovers? 

One of the best things about these simple meatballs is that they’re so easy to make and store so that you can just reheat them throughout the week or whenever you’re ready to eat! 

To refrigerate, transfer the meatballs to an airtight container and store in the fridge for 3-4 days.

For longer storage, place the meatballs in a freezer-safe container or a resealable bag and freeze for up to 3 months. Thaw in the fridge overnight or just microwave them straight from the freezer.

Ingredients

  • 1 pound lean ground beef
  • 1/4 cup red onion finely chopped
  • 1/2 cup panko bread crumbs
  • 2 Tablespoons fresh dill chopped

Instructions

  • Preheat your oven to 375°F (190°C).

Prepare Mixture:

  • In a large bowl, combine the lean ground beef, finely chopped red onion, panko bread crumbs, chopped dill, chopped mint, lemon zest, tahina, chopped kalamata olives, and salt.

  • Mix well until all ingredients are evenly incorporated.

  • Add 1-2 tablespoons of flour to the mixture to help bind it together.

How to make marry me chickpeas

Warm the olive oil in a large pan over low-medium heat. Once hot, add the garlic and sauté until fragrant. Stir in the sun dried tomatoes, oregano, red pepper flakes, salt, and ground black pepper.

Add the chickpeas, vegetable broth, tomato paste, vegan cream, and spinach to the pan. Simmer until the sauce is warmed through and the spinach is wilted.

Garnish the Tuscan chickpeas with chopped fresh basil and vegan parmesan. Scoop up every bite with crusty bread or serve it over rice, pasta, or baked sweet potatoes. Enjoy!

What is Marry Me Chicken?

Marry Me Chicken is a dish that combines cooked chicken with a sun dried tomato and garlic cream sauce. The original recipe is made with heavy cream and chicken breasts, but in vegan marry me chicken recipes, they’re swapped for vegan cream and canned chickpeas.

Why is it called Marry Me Chickpeas?

It’s simple: the silky smooth cashew cream sauce, Italian flavors, and hearty chickpeas in every bite are so good that you’re bound to get a marriage proposal from anyone you serve it to!

What can I use instead of chickpeas?

Canned cannellini beans or another white bean will work well. For a meatier dish, you can use my Vegan Chicken recipe, homemade seitan bites, or baked tofu.

My cream sauce is too thin. How can I thicken it?

I recommend making the cream sauce with cashew cream for a thick and luxurious consistency. While store-bought vegan cream (I love Ripple’s dairy free half and half) or coconut milk also work, they’ll make the sauce slightly thinner. To help thicken it, stir a cornstarch slurry (made by mixing 1 tablespoon cornstarch with 3 tablespoons water in a small bowl) into the sauce at the end and gently simmer until it thickens.

How do you store the leftovers?

The leftovers will keep for up to 5 days when stored in an airtight container in the fridge. Enjoy them for quick and easy meals or meal prep throughout the week! To reheat, zap the chickpeas and sauce in the microwave or warm them in a saucepan on the stove until heated through.

  • 1 tablespoon olive oil
  • 5 cloves garlic minced
  • 1/2 cup sun dried tomatoes chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • (2) 15-ounce cans chickpeas drained and rinsed
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup vegan cream See Notes
  • 2 cups baby spinach sliced
  • 4-5 fresh basil leaves chopped
  • optional: 1/2 cup grated vegan parmesan cheese I used Violife

Instructions

  • In a large sautĂ© pan over low-medium heat, warm the olive oil. Add the garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
  • Stir in the sun dried tomatoes, oregano, red chili flakes, salt and black pepper. Cook for 1 minute.
  • Now add the chickpeas, broth, tomato paste, cream and spinach and stir well. Bring to a gentle simmer over medium heat and cook for about 5 minutes, until warm and the spinach has wilted. Taste; add more salt, pepper or red pepper flakes as desired.
  • Remove from heat and stir in the fresh basil and grated parmesan. Serve immediately with crusty bread for dipping, or on to of cooked rice, pasta or even a baked sweet potato. Enjoy!

Notes

  1. For vegan marry me chicken, try substituting the chickpeas for any vegan chicken you like, including my homemade seitan chicken. Or make my crispy baked tofu and use that instead.
  2. For the cream, you can use any store bought dairy free creamer (I love Ripple’s Half and Half), full fat coconut milk, another unsweetened plant milk or best of all, homemade cashew cream.
  3. To make cashew cream for the cream – Bring 2-3 cups of water to a boil (I use my tea kettle). Pour the hot water over Âľ cup raw cashews and let soak for 5 minutes or up to an hour. Drain the cashews and add to a high powered blender with 1 cup of fresh water and blend until creamy and smooth.
  4. If you use a store bought cream or coconut milk, you may want to thicken the chickpeas as the sauce won’t be as thick. To do this, mix 1 tablespoon cornstarch and 3 tablespoons water in a bowl, then stir it into the chickpea mixture at the end. It should thicken up nicely.

Plus, the beauty of this dish is that you get all the flavors and textures of a classic burrito, but since you’re using an air fryer, you get irresistibly crispy chicken, too.

For this bowl, we combine tender chunks of smoky and spicy air-fried chicken over a bed of fluffy rice, creamy black beans, crunchy lettuce, creamy avocado, and zesty salsa. It’s quick, easy, and customizable — what could be better than that, right?

Ingredients You Need

  • Boneless, skinless chicken thighs – These chicken thighs are the real MVPs of our burrito bowl! They’re juicy and tender, and deliver all the protein you need to feel satisfied.
  • Kosher salt – Just a pinch of kosher salt brings out the bold flavor of the other ingredients.
  • Black pepper – We use this to add a subtle kick to our chicken.

Quick and Easy Steps to Make a Chicken Burrito Bowl

  • Prep the chicken. Place the chicken thighs in a large bowl and coat with the chipotle in adobo sauce, olive oil, and all of the seasonings. 
  • Cook the chicken. Once the air fryer is ready, put the chicken on the preheated crisper plate and air fry for the recommended time. 
  • Remove the chicken. Take the chicken out of the air fryer and immediately squeeze lime juice onto it. 
  • Serve. After the chicken has rested briefly, slice and serve over the lettuce, rice, beans, salsa, and avocado.

  • Veggies – Pack in even more nutrients with diced bell peppers, onions, or grilled corn.

Can I Store Leftovers? 

You can definitely store the leftovers for this burrito bowl! However, we recommend storing the ingredients in separate containers. Also, if you’re storing the sliced avocado, you may want to toss it in lemon juice to prevent browning.

How to Make Meal Prep Cottage Cheese Salad

  1. Combine. Add the cottage cheese, tomatoes, cucumbers, and olives to a meal prep container, 
  2. Store the other ingredients. Place the hard-boiled eggs and hummus in a separate small container. 
  3. Spice it up. Add the seasoning over top of the cottage cheese.

This easy Chicken Souvlaki is bursting with fresh Mediterranean vibes! Plump chicken pieces mingle with a marinade made of zesty lemon juice, rich olive oil, and by aromatic herbs and spices before they sizzle on the grill. Get ready for everyone to be running to the table for this one!

What is Chicken Souvlaki?

Chicken souvlaki is a Greek dish made with mouthwateringly tender chicken that has been soaked in a flavorful marinade of lemon juice, olive oil, and herbs like oregano, thyme, and marjoram before being skewered and grilled. Lamb, pork, or beef can be used for souvlaki as well.

 
For this recipe, we serve the chicken straight off the skewers, but you can also serve it wrapped in Greek flatbread or pita bread with veggies like grilled onions and peppers. You can even add the veggies to the skewer with the chicken! We also love it paired with a more-than-generous dollop of tangy tzatziki!

Ingredients You Need

  • Dried oregano – Oregano is basically the Mediterranean flavor champion for your chicken souvlaki. It gives the chicken its signature herby flavor.
  • Dried marjoram – Marjoram also brings herbal goodness to the table. It adds a hint of sweetness and freshness that takes your marinade to the next level.
  • Dried thyme – Using thyme is like adding a cozy blanket of flavor for your chicken. It brings in warm and earthy notes that turn your souvlaki into a hug on a plate!
  • Garlic cloves – This aromatic powerhouse is a favorite of ours, especially in this recipe! It infuses your chicken with bold and savory flavor!
  • Sea salt – Salt is your chicken’s best friend. It not only seasons the meat perfectly but also helps to tenderize it, keeping it nice and juicy.
  • Black pepper – Freshly ground black pepper adds a little kick to your marinade, giving your chicken an extra layer of flavor and a subtle heat.
  • Onion powder – Onion powder brings in that delicious onion flavor — we use onion powder instead of fresh onions to make sure there’s an even amount throughout the marinade.
  • Fresh lemon juice – Lemon juice is like a burst of sunshine in your marinade! It adds brightness and tanginess perfect complements the richness of the meat.
  • Extra virgin olive oil – Olive oil is the secret to juicy and succulent chicken souvlaki. It not only binds all the flavors together but also adds a subtle fruity and peppery note to your marinade.
  • Boneless, skinless chicken breasts – While you can cut the chicken breasts in other shapes, we prefer cubes so that they are easy to skewer and have the most surface area to soak up the marinade. Be sure that all of the cubes are close in size so that they cook evenly.

Simple Steps to Make Chicken Souvlaki

  1. Make the marinade. Add the olive oil, minced garlic, lemon juice, oregano, marjoram, thyme, sea salt, black pepper, and onion powder to a large bowl and whisk to completely combine. 
  2. Marinate the chicken. Place the cubes of chicken in the marinade, ensuring they are all coated with it. 
  3. Refrigerate. Place a lid, aluminum foil, or plastic wrap over the top of the bowl and refrigerate. 
  4. Soak. Place wooden skewers in water for at least half an hour (metal skewers do not need to be soaked). 
  5. Skewer the chicken. Press the cubes of chicken onto the skewers. 
  6. Cook. Set the skewered chicken on a grill pan or grill grates and cook on each side until the chicken reaches the desired internal temperature. Chicken should be cooked to at least 165 degrees Fahrenheit. 
  7. Prepare to serve. Pull the chicken off of the skewers and allow them to rest briefly before serving.

Refrigerate chicken souvlaki for 3-4 days in an airtight container or resealable plastic storage bag. 

Freeze chicken souvlaki for up to 3 months in a freezer-safe container or resealable freezer bag. Allow the chicken to thaw overnight in the refrigerator or reheat it in the oven or microwave straight from the freezer.

  • Add the chicken cubes to the marinade and toss until all the pieces are evenly coated. Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes. For best results, marinate overnight to allow the flavors to meld.

  • If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning. If using metal skewers, no soaking is necessary.
  • Preheat the grill pan to medium-high heat. (This can be made on an outdoor grill)
  • Thread the marinated chicken cubes onto skewers.

  • Grill the chicken skewers for about 4-5 minutes on each side, or until the chicken is fully cooked through and has nice grill marks. Cooking time may vary depending on the thickness of the chicken cubes and the heat of your grill.
