Here’s what you’ll need to make this incredible toasted sandwich with the tastiest ingredients.

  • Beef: Grab 6-8 beef short ribs. You’ll also need kosher salt, black pepper, and garlic powder to season those ribs before they hit the grill.
  • Braising + Seasonings: For the braising liquid, we’re using Samuel Adams Octoberfest, along with beef broth, black pepper, garlic, sea salt, chipotle puree (for that kick), dried oregano, cinnamon sticks, rosemary and thyme sprigs, and bay leaves. 
  • Grilled Cheese: To build the ultimate sandwich, you’ll need shredded cheddar cheese, some sliced red onions, jalapeños, and, of course, thick-cut pieces of bread—Texas toast or sourdough bread are some great options. 

The cook time to bring all these ingredients together isn’t quick, but the process is simple. Trust me, the results are so freakin’ delicious that you won’t mind the extra effort. 

How to Make the Beef Melt

Grilling & Braising

The best beef patty melt recipe begins by firing up your grill to medium-high heat (around 375 degrees F). Slather your beef short ribs with canola oil, then season them generously with kosher salt, black pepper, and garlic powder.

Sear those ribs on all sides until they’ve got a nice dark golden brown crust. Once seared, set the ribs aside and place your Dutch oven directly on the grill.

Add a splash of oil to the Dutch oven or large skillet, then toss in some minced garlic and sauté until fragrant—about 2 minutes should do it. Next, add in your sliced onions and let them brown for another 2 minutes. Now, it’s time to bring in the special sauce: pour in that Samuel Adams Octoberfest, followed by the beef broth, chipotle puree, black pepper, sea salt, dried oregano, cinnamon sticks, rosemary, thyme, and bay leaves.

The beef is braised in a savory beef stock liquid.

Pop the beef short ribs back into the Dutch oven, making sure they’re almost submerged in the braising liquid. Cover it up and let everything simmer over medium-high heat for about 3.5 to 4.5 hours or until the beef is fork-tender. Don’t forget to skim the fat off the top of the sauce as needed.

Once the beef is tender and falls off the bone well, remove it from the Dutch oven. Discard the bones and then strain the braising liquid until you have a smooth consomme. Shred the beef and then set it aside in a bowl.

Beer-braised beef Melt Final Touches

Now, heat up a cast iron skillet over medium-high heat (about 350 degrees F). Add a bit of oil to the skillet, then toss in your sliced red onions and jalapeños. Let them soften up for 3-4 minutes. Transfer onions and peppers to a plate. 

To build your beef patty melt, take a slice of bread and load it up with shredded cheese, shredded beef, grilled red onions, and then some jalapeños. Top it with more cheese and then another slice of bread. On the skillet, toast the first side for about 45-60 seconds and repeat for the other side. The bread should look golden brown, and the cheese should be all gooey and melted. Repeat with the remaining sandwiches.

Ingredients

Beef:

  • 6-8 Beef Short Ribs
  • 3 tbsp Kosher Salt
  • 3 tbsp Black Pepper
  • 3 tbsp Garlic Powder
  • Canola Oil as needed

Braising + Seasonings:

  • 12 oz Sam Adams Octoberfest
  • 2-3 cups Beef Broth
  • 3 cloves garlic
  • 2 tbsp black pepper
  • 2 tbsp Sea Salt
  • 2 tbsp Chipotle Puree
  • 1.5 tbsp Dried Oregano
  • 2 Cinnamon Sticks
  • 3-4 Rosemary Sprigs
  • 2 Thyme Sprigs
  • 2 Bay Leaves

Grilled Cheese:

  • 3 cups cheddar cheese shredded
  • 1 cup Red Onions sliced
  • ½ cup Jalapenos sliced
  • Thick Cut Sliced Bread

Instructions

  • Preheat your grill to medium high temperature (around 375F).
  • Slather your beef ribs with oil and liberally season with salt, pepper and garlic powder.
  • Place the beef ribs on the grill and sear off all sides until browned. Pull the beef off and place down your dutch oven.
  • Next, add your sliced onions add all the other braising ingredients plus the Sam Adams Octoberfest. Add your beef ribs back to the dutch oven and fill with beef broth so that the beef ribs are almost submerged in the broth.
  • Cover the dutch oven and let simmer over medium high heat until the beef is fork tender (about 3.5-4.5 hours). Make sure to skim the top of the sauce of fat as needed.
  • Once the beef is tender, pull it off, dispose of the bones and everything else except for the sauce itself. Strain your braising sauce from the meat until it is a clean consomme. Add the consomme to a new bowl. Then, shred your beef.
  • Preheat a cast iron skillet over a medium high heat fire (about 350F) for direct cooking. Add some oil to the skillet 2 minutes before cooking.
  • Add your sliced red onions and jalapenos to soften in the skillet for 3-4 minutes. Pull off once done.
  • Then, lay out a piece of bread and cover with a handful of shredded cheese, top with a handful of shredded beef, some red onions & jalapenos then add some more shredded cheese and another slice of bread.
  • Add the grilled cheese to the skillet and toast the bread for 45-60 seconds a side until golden brown. Flip and toast the other side, then pull off and repeat for the rest of the grilled cheese sandwiches.
  • Add your consomme to a bowl and top with chopped red onions and cilantro. Slice your Beef Melt and serve with the consomme. Enjoy!

When most people think of patty melts, they think of classic diner food. You know what I’m talking about: ground beef patties with a slice of cheese, caramelized onions and pieces of rye bread or Texas toast to round it out. I’m here to tell you that yes, the classic patty melt recipe is freakin’ delicious, but patty melts can be so much more!

Why You’ll Love These Patty Melt Recipes

Hamburger patties, slices of cheese, crispy bread, simple ingredients for toppings and sauces — what’s not to love? Patty melts are like a next level grilled cheese sandwich. However, what really makes these recipes go beyond a traditional patty melt are the toppings and bread we use. I’ll walk you through each version, but know that it’s easy to swap out ingredients based on your preferences.

Cooking Tips for Patty Melts

  • Gear: First up, a cast iron skillet is your best friend here. You’ll also want the basics: tablespoons of butter, black pepper, kosher salt and a small bowl or medium bowl for mixing up sauces.
  • The Meat: Since our sandwiches start with a juicy burger or grilled chicken, make sure you choose high-quality meat for your hamburger patty or any other type of protein. Smashburgers are great for patty melts since they’re nice and thin. This way, you won’t have all your ingredients sliding out of the bread slices.
  • The Toppings: Be sure to check your patty melt recipe before you get started and make sure you leave enough time to prep the toppings. For example, caramelized onions usually take about 45 minutes to make, so I like to get those cooked onions started early. Same goes for slices of bacon and sliced jalapeños. Have your cheese at the ready too.

  • The Special Sauce: Don’t skip it. There, I said it. Don’t. Skip. The. Sauce! It brings the whole sandwich together. Whether it’s an animal style patty melt with burger sauce or a chicken bacon ranch patty melt, you’ll find the sauce takes your meal to the next level.
  • The Bread: A traditional patty melt uses slices of rye bread. But, I think Texas toast is fantastic since it holds up really well to a juicy burger, gooey cheese and sauces. Burger buns can work too, as does a sturdy sourdough bread. You just want that bread to be golden brown when you serve it, since that buttery toast flavor is essential to any patty melt recipe.

Ingredients for the Bacon Melt

  • Beef Patties – Ground beef or ground chuck is simply seasoned with kosher salt, black pepper and garlic powder. Yellow mustard is drizzled on the patties before flipping them, giving the burgers a tangy twist.

  • Patty Melt – To round out the recipe, grab some red onions, jalapeños, BBQ sauce, cheddar cheese and good o’l white bread burger buns. Finally, don’t forget the star ingredient: strips of bacon.

The cook time for these burgers is fast, so make sure your crowd is good and ready to eat before making them! 

How to Make the Bacon Patty Melt on the Grill

Prepping Your New Favorite Burgers

First things first, heat your grill to high heat, around 400 degrees F, for direct cooking. Place a large cast iron skillet or plancha over the flames to get it nice and hot.

Start by adding some sliced bacon to the large skillet. Cook the bacon until it’s crispy, then pull it off and mop up any excess bacon fat in the skillet, leaving a little behind for the vegetable sautéing. Once the bacon is done, toss in your red onions and jalapeños. Cook onions with the peppers for about 6-8 minutes until they’re softened, then pull them off and keep them warm.

Next, grab a handful of ground beef and gently roll into equal portions. Depending on how much meat you have, you’ll want to do this for about 6-8 balls. Get your skillet ripping hot so that it’s gently smoking.

Cooking the Cheesy Patty Melt

Add a burger ball to the skillet, place a piece of parchment paper over it and firmly press with a spatula until the burger is “smashed” on the skillet. Season the thin patties with salt, pepper and garlic. Let them cook for another 1-1.5 minutes.

The thin patties are drizzled with yellow mustard for the perfect tangy twist.

Before flipping the patty, drizzle some yellow mustard on the unflipped side. Carefully flip the burger patty over, season the new side and top it with a slice of cheese. Let the cheese melt for 1-2 minutes, then pull the patty off and let it rest. Then, repeat this process for the rest of your patties.

Building the Ultimate Patty Melts

To build your patty melt, start with an upside-down bottom butter bun. Add a slice of cheese, some BBQ sauce, double patties, onions and jalapeños, more BBQ sauce and crispy bacon. Finish with the top bun also placed upside down.

The patties are covered in cheddar cheese.

Finally, add the patty melts to the skillet and toast the buns until they’re golden brown. Once they’re perfect, serve and enjoy!

  • 1 cup Sliced Red Onions
  • 1 cup Sliced Jalapeño
  • 1 cup BBQ Sauce
  • 6-8 slices Cheddar Cheese
  • 6-8 Burger Buns
  • 1 lb Bacon

Instructions

  • In a bowl, mix all the ingredients for the special sauce then place in the fridge until ready to use.
  • Heat your grill at high heat (around 400 degrees F) for direct cooking.
  • Add a cast iron skillet or plancha over the flames to heat and add some sliced bacon to the cold skillet. Cook them bacon until crispy, then pull off and mop up any excess bacon fat in the skillet.
  • Once done, add your red onions and jalapenos to saute for 6-8 minutes until softened. I left some of the bacon fat on the skillet for the onions and jalapeños to sautéed in. Then pull off and keep warm.
  • Grab a handful of ground beef and gently roll it into a ball. Repeat this for 6-8 balls or until you’re out of meat.
  • Get your skillet ripping hot (so it's gently smoking). Add a burger ball to the skillet. Place a piece of parchment over one ball and then firmly press with the spatula until the burger is “smashed” on the skillet.
  • Season the patty with salt, pepper and garlic. Let cook for another 1-1.5 minutes.
  • Before flipping, drizzle some yellow mustard on the unflipped patty.
  • Carefully flip the burger patty over and then season the new side.
  • Top with a slice of cheese and let melt for 1-2 minutes. Once melted, pull off and rest.
  • Repeat for the rest of your patties.
  • Build your patty melt with an upside down bottom butter bun, slice of cheese, bbq sauce, double patties, onions & jalapenos, more bbq sauce, bacon and the top bun on upside down.
  • Add the patty melts to the skillet and toast the buns. Once golden brown, serve and enjoy!
